Iwate’s Maesawa Beef:
A Historical Legacy
Looking for a truly unforgettable Japanese BBQ experience?
Let’s take a trip to Iwate, in Japan’s beautiful Tohoku region—home to Maesawa Beef, one of the country’s most prized wagyu varieties. With its incredible marbling, rich umami, and melt-in-your-mouth texture, Maesawa Beef turns a simple BBQ into something extraordinary.
In this recipe, we’ll show you how to recreate an Iwate-style summer BBQ using this legendary wagyu. It’s the perfect way to enjoy good food outdoors—just imagine the sound of sizzling beef, the smell of grilled vegetables, and a mountain breeze passing through.
Ingredients (Serves 4):
For the BBQ:
-
1 pound Maesawa Beef slices (or high-quality wagyu like Kobe or Miyazaki)
-
1/2 tsp sea salt (adjust to taste)
-
1/2 tsp freshly ground black pepper
-
2 green bell peppers, sliced
-
1 zucchini, sliced into rounds
-
1 onion, sliced into rings
-
1 cup shiitake mushrooms (or any grill-friendly mushrooms)
-
Sesame oil for brushing (optional)
For the Dipping Sauce (Optional):
-
1/4 cup soy sauce
-
1 tbsp mirin (sweet rice wine)
-
1 tbsp sake
-
1 tsp grated garlic
-
1 tsp grated ginger
-
1/2 tsp sugar (or honey for a sweeter profile)
-
1/2 tsp sesame oil
-
1 tbsp finely chopped green onions (for garnish)
Instructions:
1. Prepare the Beef and Vegetables
-
Slice the Maesawa Beef thinly for grilling. If using other wagyu, choose well-marbled cuts.
-
Wash and prepare vegetables in BBQ-friendly sizes.
2. Season the Ingredients
-
Lightly season the beef with salt and pepper—Maesawa beef’s flavour shines best with minimal seasoning.
-
Brush veggies with sesame oil and a pinch of salt to enhance their sweetness and prevent sticking.
3. Make the Dipping Sauce
-
In a small saucepan, combine soy sauce, mirin, sake, garlic, ginger, and sugar.
-
Gently heat until sugar dissolves, then add sesame oil. Cool slightly before serving. Top with chopped green onions.
4. Grill the Beef and Vegetables
-
Heat a charcoal grill or grill pan to medium-high.
-
Grill beef slices for 30 seconds to 1 minute per side—wagyu cooks fast, so keep an eye on it!
-
Grill vegetables until lightly charred and tender, about 2–3 minutes each side.
5. Serve
-
Plate up the grilled beef and vegetables. Serve hot with dipping sauce on the side.
-
Enjoy with steamed rice and a crisp summer salad.
Tips for the Perfect Iwate BBQ
-
Beef Quality: Use the best wagyu you can find—Maesawa is the gold standard, but Miyazaki or Omi beef work beautifully too.
-
Grill Style: Charcoal grilling brings out the full aroma and adds an authentic smoky note, just like you’d find in a countryside BBQ in Iwate.
-
Vegetables: Add local favourites like eggplant, sweet corn, or even asparagus when in season.
-
Sauce Twist: A dash of yuzu or a spoonful of grated daikon gives your sauce a refreshing Tohoku-style twist.
This simple, elegant recipe celebrates the natural flavor of Maesawa Beef while incorporating fresh summer vegetables, making it a perfect dish for BBQ enthusiasts and home cooks alike.
