Aomori Apple Cider Recipe (Serves 4)
This recipe uses fresh apples to replicate the crisp and vibrant flavors of Aomori’s cold apple cider. It’s non-alcoholic and perfect for all ages, though variations for alcoholic cider are also included.
Ingredients (Serves 4):

6 large apples (Fuji, Orin, or any sweet Japanese apple)

2.5–3 cups cold water or sparkling water

1 tbsp lemon juice

Optional: 1 cinnamon stick / a few mint leaves / sugar to taste / ice cubes

For a light alcoholic version: replace 1 cup water with dry white wine or sake

Prepare the Apples
Wash, core, and roughly chop the apples. Keep the peel for extra flavour. -
Blend
In a blender, combine apples, 1 cup water, and lemon juice. Blend until smooth. -
Strain
Pour the mixture through a fine sieve or cloth. Press gently to extract the juice. -
Taste and Adjust
Add sugar if needed. Stir until dissolved. -
Chill and Serve
Add the remaining water or sparkling water. Chill well. Serve over ice with mint or a slice of apple.
Optional: For an adult version, stir in wine or sake before serving.
