Canning is the process of preserving food in glass jars sealed to extend their shelf life. You have to do a lot of work to kill the bacteria that could naturally exist on the fresh foods, including (but not limited to) washing products, adding acids and treating pots, etc… There are two ways to treat jars: you can use boiling water for acidic foods such as fruit, pickles and sauerkraut, or pressure canning for low-acid foods such as fresh vegetables and meat.
